Angie recently found a recipe for blackened chicken with an avocado salsa. She seasoned the chicken, which I grilled, but the highlight of the meal is the salsa: avocado, with heaps of fresh cilantro, red peppers, mandarin oranges, rice vinegar, olive oil and a variety of other spices. It is just luscious, I can eat it right out of the bowl. This is how it looks:
