Buckets and Buckets of Tomatoes! (by Angie)

Tomatoes here, tomatoes there. 
 We got tomatoes everywhere!
One bucket, two buckets, and another one makes three.  
Tomatoes for you, tomatoes for me.
Mother says to daughter:  "What do we do, we'll have tomatoes forever!"
Daughter says to mother:  "I know!  Let's take a creative day and make salsa together!"

And that is what we did!  But, it ended up mom making salsa while the two daughters played together!  Rachel was all gung ho this morning about having a cooking day, but that enthusiasm waivered as she saw what a monumentous task we had on our hands!  

I was at a homeschool function last week and a friend mentioned to me about how one of her relatives had so many tomatoes, she didn't know what to do.  Without really thinking about it, I said:  "I'll take them!"  In my small, I only use fresh tomatoes mind, I was thinking I would be getting a handful or so.  Weeeelllll, when my friend followed up with me this week, I ended up with two 5 gallon buckets full of tomatoes!  Okay, okay, so I said three buckets in my little rhyme.  Yes, I have so many I could have divided them into another bucket!  I needed the number three to rhyme!

So, what do you do with ten gallons of tomatoes???  We figured out how to use 5 gallons.  I made up a quadruple batch of salsa and then I blanched two big potfuls, crushed and bagged them.  I'll use those for chili or minestrone or spaghetti sauce . . . mmmmmm.  

While I slaved away in the kitchen with our tomatoes, Sarah decided to be creative on her own and made up some salt dough to sculpt with.  She put forth a great idea, to have the first Thursday of every month "Creative Day."  I'll leave it up to her to mesh out the details, but I thought it was a GREAT idea.  I can't wait to see what we come up with next month.  Applesauce, maybe?
